Cerasuolo d’Abruzzo DOC

Cherry red color with bright violet hues. Intense fruity aromas, delicate floral notes and hints of wild berries and black cherry. With a good structure, it is soft, fresh and balanced.
Excellent as an aperitif and perfect with pizza, it is decidedly versatile in combinations at the table. It goes well with both white meats and fish, but it is unsurpassed with fish soup, tripe, fresh cheeses and grilled vegetables.

GRAPES
Montepulciano d’Abruzzo 100%.

PRODUCTION AREA
In the heart of the province of Chieti in Abruzzo, between the Maiella National Park and the Adriatic Sea.

TERRAIN
Hilly, with an average altitude of 230 metres above sea level, with mostly calcareous clay soil.

VINIFICATION AND REFINEMENT
Soft pressing after short cold pre-fermentation maceration and low temperature fermentation in stainless steel tanks, 16-18 ° C. Aging on the fine lees without bâtonnage for about 4-5 months before bottling.

SENSORY CHARACTERISTICS
Intense pink color with soft purple hues that evolve to salmon during bottle aging. Ample and elegant aromas with notes of cherries, raspberries and wild strawberries that combine with fine floral notes and aromatic herbs. On the palate it is structured but well balanced by the acid freshness. Long persistence, with a pleasant and gastronomic phenolic grip.

FOOD AND WINE PAIRINGS
Cold cuts, pizza, white meat, grilled vegetables, fish soup, tripe, fresh cheese. Excellent as aperitif.
